Vanilla cake with chocolate frosting

Ingredients

3 cups all-purpose flour

½ tspkosher salt

2 cups granulated sugar

1½ cups unsalted butter, room temperature

4 large eggs

¼ tsp baking soda

2 tsp baking powder

1½ cups whole milk

3 tsp vanilla extract

Frosting ingredients

2 cups sugar

8 ounces chopped chocolate

1 cup unsalted butter

1 tbsp. milk

1 tbsp. pure vanilla extract

1/8 tsp kosher salt

Directions

  • Heat the oven to a temperature of 350°
  • Grease three cake pans with butter and line with parchment paper.
  • Beat the granulated sugar and butter in a bowl until the mixture is fluffy and light.
  • Whisk the eggs, salt, vanilla and milk together for a minute in order to make the batter thick.
  • Sift and combine flour, baking powder and baking soda with your hands in a separate bowl.
  • Mix the dry ingredients to the batter gradually using an electric mixer running at a low speed. Combine the ingredients alternatively so that everything becomes evenly distributed. It is advisable to mix the ingredients in two or three batches. Remember to scrape the bottom and sides of the bowl during the process.
  • Share the batter evenly into the greased pans and bake for 30-35mins. The cake is ready once an inserted toothpick comes out clean.
  • After cooling for around 20mins, remove from pans and place on racks.
  • The frosting can be prepared while the cake is left to cool. Melt the chocolate completely in a pan that is placed over a pot of hot water, but the pan must not touch the water. Allow it to cool for 15 mins.
  • Next, beat butter and add sugar, chocolate, vanilla, milk and salt until well mixed.
  • Assemble the cake and add frosting layer by layer. You can decorate the entire cake with sprinkles.

Funfetti cake

Ingredients

3½ cups all-purpose flour

5 large eggs

1 tbsp. baking powder

½ tsp salt

1 cup unsalted butter, room temperature

2 cups granulated sugar

1 cup milk

1 tbsp. pure vanilla extract

Frosting ingredients

1½ cups unsalted butter

1/8 tsp salt

8 ounces’ cream cheese

3 tsp vanilla extract

6 cups powdered sugar

2 tbsp. milk

2 cups sprinkles

Directions

  • Preheat the oven to a temperature of 350 °F.
  • Grease three 8″ cake pans with butter and flour them.
  • Combine the butter and sugar with a hand mixer for two minutes. Later on, add the eggs and milk. Beat the mixture for a minute.
  • Whisk the flour, salt, vanilla extract and baking powder together in a medium sized bowl.
  • Divide the dry ingredients into three sections and add gradually to the mixture, beatwith an electric mixer at medium speed.
  • Carefully fold the sprinkles into the batter.
  • Distribute the batter into the pans evenly.
  • Bake for 30-35 mins.
  • Leave to cool completely before assembling and frosting.
  • To prepare the frosting, beat butter, vanilla extract, salt, cream cheese and two cups of powdered sugar. Once it becomes light and fluffy, add in the remaining sugar gradually with milk as desired.
  • Place the first layer of the cake on a cake stand and cover the entire top with frosting. Place the other two layers one by one and evenly cover each and the sides with frosting. The cake can be stored in the freezer for 4 weeks.
